BBC journalists for the most part are pretty savvy people and must know they have chosen fame, prestige, status, lucrative salaries over telling the truth. Maitlis knows perfectly well that Israel is an apartheid state oppressing the indigent population but if she addresses that question live on air she will be out of a job by the end of the week. Bang goes all the perks, the lovely lifestyle, the fawning and scraping adulation by other media hacks and hob-nobbing with politicians and entertainment stars. It's a lot to give up.
Maybe there's cognitive dissonance at work here too, which enables her to keep fairly sane and stable, so she doesn't throw up at glimpsing her own reflection in a mirror. But sleeping at night with a restful mind might be a problem. Alcohol is a possible temporary solution.

I think it was Maitlis' predecessor on Newsnight, Kirsty Wark who interviewed a supporter of Palestinians a while ago and asked them about 10 times very aggressively 'do you condemn the rockets', effectively sabotaging the interview. Tried to find the clip once but failed. Anyway it's a beloved tactic by state propagandists everywhere to deflect attention from their crimes by focusing on those of official enemies, real, imagined or exaggerated to the point of absurdity. 'We' are always the 'Good Guys'.
