Hi Michael, land based i agree with James almost any river mouth but the pick would be the Rakaia (south of Christchurch) River mouth when the salmon are running although can become pretty crowded peak season. Boat - you have to try the Sounds and Nelson area (top of the South Is.)for views and variety.
