Some I prep and freeze, some not. I keep onions, and used to keep potatoes, in the coolest place that I could find, in really large baskets. That can even be in a room with AC. No basements here, either, and hot in the summertime.
That was nice about the sweet potato. They are good as-is, with food such as chicken, etc. Your meal sounds perfect with it. And, super healthy!
I eat them baked, wedged, etc. I also like to cut them thin, and put them in the air cooker tossed with just a tad of olive oil. Salt when they come out, and I serve with herby chicken strips that I put in the air fryer at the same time. I call that my tapas meal.
Growing up, my grandmother would make sweet potatoes for her dinner sometimes, and my dad liked it once in a while, too. We didn't sweeten them, we just baked them, then served them buttered, with a pinch of salt. Most people prefer them with brown sugar, but for a meal/with a meal, they are also great simply buttery, I think. Especially if they are good ones, so already have a sweetness to them.
