It's actually important not to turn the chicken until it's ready on the first side. It's difficult not to touch it but if you can help it, the chicken is better, as yours was.

And coleslaw? Wow, what a great meal!
I see where your thinking is going on adding the coleslaw. The only hesitation that I would have is that the first mayonnaise will be carried over. It might be perfectly fine, depending on how long it takes to eat, of course. You're right, though, it gets better, the longer it sits! (I love coleslaw with many dishes!)
Yes, me too...when I could have butter. The butter gives flavor and browning to the food. Oil alone is fine, but you don't get that buttery flavor.
How nice! I like small tomatoes (cherry, pear, etc.) as they are bite sized, but also generally good, ripeness-wise.
When I suggest sides for sandwiches to people - especially if they have to count carbs, want to cut calories, increase nutrition, etc. I often say that baby tomatoes make a good side with many sandwiches. I love potato chips, but they aren't always the healthiest choice for people. Mind you, I don't need an excuse to have tomatoes with things!
