I've found yeast but am still looking for strong flour. Try ordinary plain white: there's only a couple of percentage of glutin difference: and mix with wholemeal. Plenty of that still but down to my last white bag so might have to go on the hunt tomorrow but I haven't even seen plain for a month and a half... Still no sign of yeast: mixing just a little "goldust" in alongside the last dod of the previous dough to kick it to life. Am trying a version of soda bread using self-raising flour and bottled beer as the fizzy raising agent. Not bad. Sounds good -tried a little lemon juice banged in at the last moment? Acid should activate the bicarbonate in the SR more evenly and make for a better rise. Alas I had a kitchen casualty...my poor old overworked (use it for pastry too) pasta machine gave up the ghost: after taking it to bits and seeing the damage: an unrepairable cog I had to look to replace it. Interestingly the housebound Brits have seemingly also transformed their kitchens into little Italy: there has been a run on the reasonably priced decent ones to replace it...all out of stock so I had to stump for a cheap chinese model. It finally arrived and its about half the weight of its fat soprano predecessor: I just can't see it lasting. |
