The Juvenille fish in the legal to 50cm size are the best eating. Trim all the dark meat from the fillet. I usually bleed them straight away. They are rather a greasy fat soaked fillet but are quite tasty. As usual if you chill the fish straight away it will taste better. Id eat moki over Rig, but thats just my taste BUDS
