Put salt in an oven dish, roll fillets top and bottom, then drop into another empty tray to drain. Make sure its got a high lip, as the moisture streams out within hours. Leave in fridge overnight. Drain over night, leave another day, drain. Then cut down, and gladwrap. Then chuck into freeza. I had a pile of skippies given to me and was tops!!!. I do the same with kahawai as a longline bait. Cant beat it.
