    You don't mention exhaust readings?, almost every single 205GTI I have ever looked at idled like you describe, You should look at AFM output at idle.voltage needs to be about 3v or thereabouts to give good idle CO and as mentioned, a slight adjustment of AFM return spring will correct that, but only after you have verified that coolant temp sensor is o.k, fuel pressure ok and sump not full of fuel.
    One other thing-- with engine swap being done make sure that correct inlet manifold gasket is fitted, even the dealers used to supply the wrong gasket (without cutouts for the injectors)causing all the running faults you describe.
