"Kill Anything That Moves: The Real American War in Vietnam" by Nick Turse and "The American War in Vietnam" by John Marciano are two of the best critical books. Also "The Pentagon Papers: The Secret History of the Vietnam War" by Neil Sheean is excellent but more about the leaks. Max Hastings has a good one volume history, "Vietnam: An Epic History of a Divisive War 1945-1975" but he's obviously a bit more mainstream. On the fiction side these are all good: "The Sorrow of War" by Bao Ninh "Matterhorn" by Karl Marlantes "Fields of Fire" by James Webb "The 13th Valley" by John M. Del Vecchio
