Mae Hong Son itself is on the the "banana pancake trail" almost and has a tourist industry but once you get past that and out nearer the borders it gets wild. There's a good book called "Hello Shadowlands" which reports from a lot of the places tourists should never be (not strictly Thailand but also Myanmar, etc.) I have it so if you're interested I can up it.
