Spiny backs skinned. Simple to do (with the aid of some pliers), now with the skinned trunk it is easy to remove the backbone if required, although that really isn't necessary.

These fish are easier to prepare this way than it is to deal with more common fish such as gurnard ie: no pin bones or rib bones.
