My guess from this end of my lap-top is that the Lambda sensor is faulty. Try blipping the throttle to see how quick/slow the sensor reacts. If its possible, try removing the Lambda sensor and see if its heavily carboned up. This could also cause the slow reaction time. I assume the vehicle drives ok despite the pinking.
