Most members of the shark and ray family will release an ammonia-like substance when they become distressed, this can totally ruin the flesh. The best way to stop this happening is to remove all the fins and the tail, then cut down to the backbone cartilage at the vent, then turn the blade so it is facing forward, now cut toward the gills. Now turn the blade down to remove the head. This will automatically remove the head, the gut cavity and the contents.
Now give the trunk a good wash in salt water and what you have is magnificent eating.
