Mike from Oregon, has a mill out by Boca de Iguana and he has been milling coconut trees for a few years. I am not sure if he is still doing that type of work. He has a 2 story garage and rental across from his main house that he made completely out of coconut wood. All of the siding is also coconut shingels, it is rather nice and has held up for a number of years. Good luck!
