That's one of my points. With its death, a single cow can feed someone for about a year. The same amount of vegetables to feed someone for a year will involve many fields being ploughed up and sprayed with pesticides and chemical fertilisers. Removing habitat and poisoning small animals like rabbits, mice, badgers, etc. and also slugs and bees, etc.. Also out of season food produced in artificially heated greenhouses and shipped from the other side of the world in refrigerated containers on oil driven planes, ships and trucks.
So lots more slaughter and pollution are involved in producing the vegetables, but you don't see it because the blood is in the soil, not on your plate.
